Appearance: Intense red color.
Bouquet: Its nose is friendly, not too intense, different, with aromas of wild flowers, herbs, vegetables and spices, those aromas typical of this grape that other wines try to camouflage.
Palate: In the mouth, the acidity and salinity compete for the leading role in a direct, fresh and rather short drink. It is a tremendously Atlantic wine, varietal, impeccable, flavorful, direct.
The Falcón brothers are currently taking over the management of Bodegas y Viñedos Don Olegario. But the tradition and passion for wine has been inherited from his grandfather Adolfo Falcón, who since 1950 dedicated himself to the local marketing of wine. His father, Olegario, followed in his footsteps and established himself as a winemaker in 1980. He bought the current vineyard and began to produce Albariño wine under the name of Don Olegario, which in 1988 joined the Rías Baixas D.O. Currently the Falcón brothers are the third generation working in winemaking, and they try to maintain the same style and quality. They grew up among vineyards and helped their father in all aspects related to the winery, from planting the vineyards to the production process, sales or customer service. They were taught that “Wine is made in the vineyard”, therefore, the heart of their winery is their La Finca vineyard. La Finca is a vineyard of approximately 5 hectares, from where most of the grapes from which they make the wines of their winery come. The age of its vines (more than 30 years), its proximity to the sea and the characteristics of the soil play a decisive role in the flavor of Don Olegario’s Albariños. The farm is located in the Rías Baixas Designation of Origin, in the sub-area of Valle del Salnés, located in Galicia (northwestern Spain). The Salnés Valley is the territory of the Albariño par excellence and the area with the longest wine-growing tradition of the Designation of Origin. The Atlantic climate of the D.O. Rías Baixas is another factor that directly affects the peculiarities of La Finca’s grapes. “La Finca” is only one km away from the Atlantic Ocean, the sea breezes provide the grapes and the wines with certain very pleasant salty notes. The Don Olegario Winery is located in La Finca. This proximity to the vineyard allows them to pamper the entire process of making their albariños as much as possible, from when the vine is planted until the grape is introduced into the winery. Its vineyard is certified as Integrated Production, this means that it is a sustainable production for which respectful practices with the environment have been followed, ensuring high quality production, profitability of the exploitation and the elimination or reduction of external inputs and sources of contamination. To certify it, the vineyard has to go through different analyzes each year that show its commitment to the controlled and reduced use of phytosanitary products, fertilizers and fossil fuels. Respect for the environment is a maxim in their work with which, in some way, they intend to return to the earth all that it offers them.
